RTX Traveler Recipe | Callaway Gardens Speckled Heart Cheese Grits

The Callaway Gardens Country Store has a variety of goods and kitchen products that would be a welcome addition to any Southern cook’s dream pantry. Speckled Heart Grits are made from the whole grain including the heart of the corn kernel, producing a rich and mellow corn flavor. This dish can be served for breakfast along with sausage or bacon and a fruit salad, or for lunch or dinner as a side. It can be doubled to please a crowd, and made ahead to keep mealtimes simple at home or on vacation.



1 cup grits

4 cups of water

1t salt

2 cups of sharp grated cheese

1 stick butter

Dash or so of Tabasco


To 4 cups of boiling water, add 1 cup of Callaway Gardens Speckled Heart Grits and 1 teaspoon of salt and return to a boil.

Reduce heat to medium, cover and cook for about 20-30 minutes, stirring often to prevent sticking. Additional water or milk (which gives a delightful creamy quality to the grits) may be added for the desired consistency, as the grits cook.

Remove from heat and add 2 cups of sharp grated cheese, 1 stick of butter and dash of Tabasco or other hot sauce. Stir until butter and cheese are completely melted. Pour into casserole dish and bake 1 hour at 325. Serves 4 to 6.

Make-ahead tip: Pour into casserole dish and refrigerate or freeze. Bake at 325 for 1 hour (longer if frozen).
