Recipe | Tahoe 3 Egg Omelet

Lake Tahoe loves breakfast, and omelets dominate the menus of most local diners and breakfast joints in the area. Filled with a variety of veggies, cheeses and proteins omelets are easily customized and packed with plenty of fuel, making them perfect for cooking in your vacation condo or at home. Here is a rundown of how to make the perfect omelet along with a list of some of Lake Tahoe’s favorite fillings. Omelette in a frypan (close-up shot)




Sliced Ham




Monterey Jack cheese

Cream cheese






Bell peppers




  1. Sauté any vegetables with 1 teaspoon of butter and set aside. Half of a cup of filling for 3 eggs will do.
  2. Crack the eggs into a small bowl and whisk.
  3. Add salt and pepper and any herbs such as parsley, chives and thyme.
  4. In a 9-inch non-stick frying pan heat 1 tablespoon of butter and pour in the eggs. In the first 30 seconds use a spatula to create small cuts through the omelette, allowing the uncooked egg on the top to flow down to the bottom of the pan.
  5. When the top is nearly set, spread fillings over half of the omelet, top with cheese and turn off the heat.
  6. Use your spatula to flip one half of the omelet over the other, flip once and serve immediately.
