Blueberries are a favorite local fruit for Mainers, and fresh-picked ones are often frozen in the summer so that they can be enjoyed in baked goods like pies, bread, cookies and muffins throughout the colder months. Try this recipe for Maine Blueberry Muffins for a tasty treat any time of year.

  • 1 3/4 cup flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup sugar
  • 1 egg, beaten
  • 3/4 cup milk
  • 1/3 cup vegetable oil
  • 3/4 cup fresh or frozen blueberries, sprinkled with 2 tablespoons of additional sugar
  • 1 teaspoon lemon peel, grated (optional)



  • Preheat oven to 400 degree and grease muffin tins or line with paper baking cups.
  • In a large mixing bowl, stir together flour, baking powder and salt. In a medium bowl, combine sugar, egg, milk and oil.
  • Add wet ingredients to dry ingredients and stir until just moistened; batter should be lumpy. Fold in blueberries, additional sugar and lemon peel.
  • Fill prepared baking cups 2/3 full. Bake in 400 degree oven for 20-25 minutes or until golden. Remove from pans and place on cooling rack; serve warm. Makes 10-12 muffins.
